There are a number of methods:
- Press PrintScreen, Alt-Tab out of the game, start an image editor, even MS Paint, paste the clipboard contents and Save As JPG file.
- Press F12 while in-game, you'll find them in racer/data/dump folder as .TGA files. You can convert them later to JPG.
- Use FRAPS - it saves directly as JPG
